Iron (Heme vs. Non-Heme)
Heme and Non-Heme Iron
Heme iron is found in animal flesh and is easily absorbed; non-heme iron comes from plants (and eggs) and is best absorbed when paired with Vitamin C.
Iron is found in two forms: Heme and Non-Heme. Heme iron is found exclusively in animal tissue and is absorbed efficiently by the body. Non-heme iron is found in plant sources (like spinach and lentils) and eggs.
Non-heme iron is more sensitive to other compounds in your food. You can boost its absorption by adding a source of Vitamin C (like lemon juice or bell peppers) to your meal. This is a simple culinary technique that can make a big difference for plant-based health.
